Preparing the Fish

Season the Fish
Pat the rockfish fillets dry with paper towels. Rub the blackening seasoning evenly over both sides of the fillets.

Cook the Fish
Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned rockfish fillets. Cook for about 3-4 minutes on each side until the fish is cooked through and has a nice blackened crust. Remove from heat and let it rest for a minute before flaking the fish into large pieces.
Making the Cilantro Lime Creme of Tartar Sauce

Combine Ingredients
In a small bowl, mix together the mayonnaise, sour cream, chopped cilantro, and lime juice. Stir until well combined. Season with salt and black pepper to taste. Set aside.

Warm the flour tortillas in a dry skillet or microwave. On each tortilla, layer shredded lettuce, flaked rockfish, jalapeno, red onion, cucumber, and drizzle with cilantro lime creme of tartar sauce.
