Prepare the Ingredients
Start by chopping the roasted red pepper, green bell pepper, red onion, and tomato into small pieces. Set aside.

Marinate the Chicken
Season the chicken breasts with Cajun seasoning, salt, and black pepper. Let them marinate for at least 15 minutes.

Prep the Shrimp and Chorizo
Peel and devein the shrimp. Slice the chorizo sausage into rounds.

Cook the Pasta
In a large pot, bring water to a boil. Add a pinch of salt and the penne pasta. Cook according to package instructions until al dente. Drain and set aside.

Cook the Proteins
In a large skillet, heat olive oil over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side until cooked through. Remove from the skillet and let rest before slicing.

Sauté the Chorizo and Shrimp
In the same skillet, add the sliced chorizo and cook for 2-3 minutes until it starts to brown. Add the shrimp and cook for another 3-4 minutes until the shrimp are pink and opaque. Remove from heat and set aside.

Make the Cajun Cream Sauce
In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and add Cajun seasoning, stirring to combine. Let it simmer for 3-4 minutes until slightly thickened. Adjust seasoning with salt and black pepper to taste.

Combine Ingredients
Add the cooked penne pasta, sautéed vegetables, sliced chicken, shrimp, and chorizo into the skillet with the cream sauce. Toss everything together until well combined and heated through.
