Method

Fried Green Tomatoes

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Season with salt and black pepper.

    Set up Dredging Station

    In one bowl, place the flour. In a second bowl, whisk together the eggs and milk. In a third bowl, mix the cornmeal with a bit of salt and pepper.

    Dredge and Fry

    Coat each tomato slice in flour, dip it in the egg mixture, and then coat with cornmeal. Heat vegetable oil in a skillet over medium-high heat. Fry the tomatoes for about 3-4 minutes on each side until golden brown. Drain on paper towels.

Poached Eggs

    Boil Water

    Fill a medium saucepan with water and bring it to a gentle simmer. Add white vinegar.

    Poach the Eggs

    Crack each egg into a small bowl. Gently slide the eggs into the simmering water and cook for 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

    Prepare the Potatoes

    Dice the potatoes, onion, and bell pepper into small pieces.

    Cook the Home Fries

    Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes until golden and crispy. Stir in the onion and bell pepper, cooking for an additional 5 minutes. Season with salt and pepper.

Boursin Spread

    Take the Boursin cheese and spread it generously on each half of the toasted English muffins.

Corn Salsa

    Combine Ingredients

    In a bowl, mix together the corn, red onion, cilantro, lime juice, salt, and black pepper. Adjust seasoning to taste.

Poblano Sauce

    Roast Poblano Peppers

    Char the poblano peppers over an open flame or under the broiler until blackened. Place in a bowl and cover to steam for 10 minutes. Peel and chop.

    In a blender, combine chopped poblano peppers, sour cream, lime juice, salt, and black pepper. Blend until smooth.

Hollandaise Sauce

    In a small saucepan, melt the butter over low heat.

    In a bowl, whisk together egg yolks and lemon juice until thickened.

    Gradually whisk the melted butter into the egg yolk mixture until it becomes a thick and creamy sauce. Season with salt and black pepper.

Assembly

    Toast the English muffins and place a layer of Boursin spread on each half. Top with fried green tomatoes, a poached egg, corn salsa, and a drizzle of poblano sauce and hollandaise.
