Preparing Pork Belly

Slicing and Seasoning
Cut the pork belly into 1-inch cubes. Season with salt and black pepper on all sides.

Frying
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned pork belly cubes and fry until golden brown and crispy, about 5-7 minutes, turning occasionally. Once cooked, remove from the skillet and drain on paper towels.

Mixing the Drizzle
In a small bowl, whisk together the Dijon mustard, honey, and apple cider vinegar until well combined. Set aside.
Plating the Dish

Assembling the Plate
On a serving plate, create a bed of the cheddar grits. Top with the crispy pork belly cubes. Drizzle the sweet mustard mixture over the top. Serve immediately.
