Method

Preparing Pork Belly

    Slicing and Seasoning

    Cut the pork belly into 1-inch cubes. Season with salt and black pepper on all sides.

    Frying

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned pork belly cubes and fry until golden brown and crispy, about 5-7 minutes, turning occasionally. Once cooked, remove from the skillet and drain on paper towels.

Making Cheddar Grits

    Cooking Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and 0.5 tsp of salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened.

    Adding Cheese and Butter

    Once the grits are cooked, stir in the cheddar cheese and butter until melted and smooth. Adjust seasoning if necessary.

Preparing Sweet Mustard Drizzle

    Mixing the Drizzle

    In a small bowl, whisk together the Dijon mustard, honey, and apple cider vinegar until well combined. Set aside.

Plating the Dish

    Assembling the Plate

    On a serving plate, create a bed of the cheddar grits. Top with the crispy pork belly cubes. Drizzle the sweet mustard mixture over the top. Serve immediately.
