Preparation

  1. 1

    Prepare the Vegetables

Chop the carrots, celery, and onions into small, even pieces. Dice the potatoes into bite-sized cubes.

  2. 2

    Gather Ingredients

Ensure you have all the ingredients ready and measured out for easy access while cooking.

Cooking

  1. 3

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables begin to soften.

  2. 4

    Add Potatoes and Broth

Stir in the diced potatoes and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.

  3. 5

    Incorporate Tomatoes and Peas

Add the diced tomatoes and peas to the pot. Stir well to combine all the ingredients.

  4. 6

    Add Crab and Seasoning

Gently fold in the blue crab meat and Old Bay seasoning. Let the soup simmer for an additional 10 minutes, allowing the flavors to meld together.

  5. 7

    Season to Taste

Taste the soup and add salt and black pepper as needed. Adjust seasoning according to your preference.

Serving

  1. 8

    Serve the Soup

Ladle the Maryland Crab soup into bowls and serve hot. Garnish with fresh parsley if desired.
