Low Country Shrimp & Cheddar Grits Recipe

Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt, and slowly whisk in 1 cup of grits. Reduce heat to low and stir occasionally, cooking for about 20-25 minutes until thickened.

    Add Cheese and Cream

    Once the grits are cooked, stir in 1 cup of sharp cheddar cheese and 0.5 cups of heavy cream. Mix well until the cheese is melted and the grits are creamy. Keep warm.

Prepare the Shrimp Mixture

    Cook the Chorizo

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 4 oz of chorizo and cook until browned, about 4-5 minutes.

    Add Vegetables

    Chop the red onion and red bell pepper. Mince the garlic. Add the chopped red onion, red bell pepper, and minced garlic to the skillet with the chorizo. Sauté for 5-7 minutes until the vegetables are soft.

    Cook the Shrimp

    Peel and devein 1 lb of shrimp. Add the shrimp to the skillet, along with 0.5 tsp of black pepper and 0.25 tsp of cayenne pepper. Cook for about 3-5 minutes until the shrimp are pink and cooked through.

Assemble the Dish

    Serve

    Spoon the cheesy grits into bowls and top with the chorizo and shrimp mixture. Garnish with fried onion straws for added crunch.
