Preparing the Ravioli

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center, and crack the eggs into the well. Add olive oil. Gradually mix the flour into the eggs using a fork until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese, shredded mozzarella, and parmesan cheese. Mix until well combined and set aside.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out one piece at a time to about 1/8 inch thick, keeping the remaining pieces covered.

    Fill the Ravioli

    Cut the rolled dough into squares. Place a teaspoon of filling in the center of each square. Moisten the edges with water, fold over to form triangles, and press to seal.

Making the Marinara Sauce

    Cook the Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir to combine and let simmer for 20 minutes.

    Finish the Sauce

    Stir in the chopped fresh basil just before serving. Remove from heat and set aside.

Cooking the Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes, until they float to the top. Remove with a slotted spoon.

    Serve

    Plate the cooked ravioli and top with marinara sauce. Sprinkle with additional parmesan cheese if desired.

Optional Side Dish

    Prepare the Broccoli

    Steam the broccoli until tender, about 5-7 minutes. Serve alongside the ravioli.
