Preparing the Chicken

Marinate the Chicken
In a bowl, combine the buttermilk, salt, and black pepper. Add the chicken breasts and ensure they are fully submerged. Cover and refrigerate for at least 1 hour (or up to overnight).

Coat the Chicken
In a shallow dish, mix the flour and Old Bay seasoning. Remove the chicken from the buttermilk, allowing excess to drip off, then dredge in the seasoned flour, pressing lightly to adhere.

Fry the Chicken
In a deep skillet or frying pan, heat the oil over medium-high heat. Once hot, carefully add the coated chicken breasts. Fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

In a small saucepan over low heat, melt the butter. Once melted, stir in the honey and Old Bay seasoning until well combined. Heat just until warm, then remove from heat.
Assembling the Sandwich

On the bottom half of each brioche bun, place a leaf of lettuce, then the fried chicken breast. Drizzle with the honey Old Bay sauce, top with sliced tomatoes, and cover with the top half of the bun.
