Method

Fried Chicken

  1. 1

    Marinate the Chicken

Soak the chicken thighs in buttermilk for at least 2 hours or overnight in the refrigerator.

  2. 2

    Prepare the Coating

In a bowl, combine flour, paprika, garlic powder, onion powder, salt, and black pepper.

  3. 3

    Fry the Chicken

Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from buttermilk, dredge in the flour mixture, and fry until golden brown and cooked through, about 6-8 minutes per side.

House-Made Biscuit

  1. 4

    Preheat the Oven

Preheat your oven to 450°F (232°C).

  2. 5

    Mix Dry Ingredients

In a large bowl, combine flour, baking powder, baking soda, and salt.

  3. 6

    Cut in the Butter

Cut the cold butter into the flour mixture with a pastry cutter or fork until it resembles coarse crumbs.

  4. 7

    Add Buttermilk

Stir in the buttermilk until just combined. Do not overmix.

  5. 8

    Shape and Bake

Turn dough onto a floured surface, pat to about 1 inch thick, cut into rounds, and place on a baking sheet. Bake for 12-15 minutes until golden.

Black Pepper Gravy

  1. 9

    Make the Roux

In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 2 minutes until lightly golden.

  2. 10

    Add Milk and Season

Gradually whisk in the milk and bring to a simmer. Stir in black pepper and salt, cooking until thickened.

Home Fries

  1. 11

    Cook the Potatoes

Heat olive oil in a large skillet over medium heat. Add diced potatoes, salt, black pepper, and paprika. Cook, stirring occasionally, until potatoes are golden and crispy, about 15-20 minutes.

Poached Eggs

  1. 12

    Prepare Water

Bring a pot of water to a gentle simmer, adding vinegar.

  2. 13

    Poach the Eggs

Crack each egg into a small bowl, then gently slide into the simmering water. Poach for about 3-4 minutes until whites are set but yolks remain runny.
