Prepare the Filling
In a mixing bowl, combine the lump crabmeat, diced red onion, roasted red pepper, and chopped asparagus. Season with Old Bay, salt, and pepper. Set aside.

Cook the Omelet
Heat a non-stick skillet over medium heat. Add a little butter or oil if necessary. Pour in the whisked eggs and let it cook for about 2 minutes until the edges start to set.

Add the Filling
Once the edges of the omelet are set, spoon the crab mixture onto one half of the omelet. Carefully fold the other half over the filling and cook for another 2-3 minutes until the eggs are fully cooked.
