Method

Preparing the Hash

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into bite-sized pieces.

    Cook the Home Fries

    In the same skillet, add the home fries and cook until golden and crispy, about 10-15 minutes, stirring occasionally. Remove from heat.

    Add Crab and Seasoning

    Add the lump crabmeat, chopped bacon, Old Bay seasoning, and roasted red pepper to the skillet with the home fries. Stir gently to combine and heat through for about 2-3 minutes.

    Prepare the Asparagus

    While the hash is heating, trim the asparagus ends and blanch them in boiling water for 2-3 minutes until tender. Drain and set aside.

Making the Chipotle Hollandaise

    Melt the Butter

    In a small saucepan, melt the butter over low heat, then remove from the heat and let it cool slightly.

    Combine Egg Yolks and Lemon Juice

    In a heatproof bowl, whisk together the egg yolks and lemon juice until slightly thickened.

    Add Butter Gradually

    While whisking continuously, slowly drizzle in the melted butter until fully combined and emulsified. Stir in the chipotle in adobo sauce and season with salt to taste.

Cooking the Eggs

    Fry the Eggs

    In the same skillet used for the hash, add a little oil if necessary and heat over medium heat. Crack the eggs into the skillet and cook to your desired doneness, seasoning with salt and pepper.

Assembling the Dish

    Plate the Hash

    Divide the crab hash among plates, topping each with a fried egg. Arrange the blanched asparagus on the side.

    Drizzle with Hollandaise

    Generously drizzle the chipotle hollandaise over the top of the fried eggs and hash. Serve immediately.
