Saute the Onions
Finely chop the onion. In a large skillet, heat a tablespoon of oil over medium heat. Add the onions and sauté until they are translucent and lightly golden, about 5 minutes.

Fry the Eggs
In a separate non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and fry them sunny-side up or to your desired doneness. Season with salt and pepper.
Making Chipotle Hollandaise

Prepare the Hollandaise
In a heatproof bowl, whisk together the egg yolks, lemon juice, and a pinch of salt. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens slightly.

Add Butter and Chipotle
Slowly drizzle in the melted butter while whisking constantly, until the sauce is thick and creamy. Stir in the chipotle in adobo sauce and adjust seasoning with salt if needed.

Plate the Dish
Spoon the corned beef hash onto plates, top with a fried egg, and drizzle with chipotle hollandaise sauce.
