Method
Preparing the Home Fries

Start by peeling and dicing the potatoes into small cubes. Rinse them under cold water and pat them dry.

In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, and sauté until soft, about 5 minutes.

In a mixing bowl, combine unsalted butter, grated Parmesan cheese, garlic powder, salt, and black pepper. Mix until well combined and creamy.

Transfer the Parmesan butter to a small container and refrigerate until needed.

Crack the eggs into individual small bowls. Gently slide each egg into the simmering water. Cook for 3-4 minutes for a runny yolk or longer for a firmer yolk.

Slice the English muffins in half and toast them until golden brown.

In a skillet, warm the Canadian bacon over medium heat until heated through, about 2-3 minutes.
