Chicken Preparation

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Grill or pan-fry the chicken over medium heat for about 6-8 minutes on each side, or until cooked through. Remove from heat and let rest.

    Cook the Bacon

    In a skillet, cook the bacon slices until crispy. Transfer to a paper towel-lined plate to drain excess fat.

Garlic Aioli

    Make the Aioli

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix until well combined and set aside.

Guacamole

    Prepare the Guacamole

    In a bowl, mash the ripe avocados. Stir in lime juice, cilantro, diced onion, and salt. Mix until smooth and set aside.

Parmesan Butter

    Make the Parmesan Butter

    In a small bowl, soften the unsalted butter and mix in grated Parmesan cheese until fully combined.

Assembly

    Assemble the Melt

    Slice the ciabatta rolls in half. Spread Parmesan butter on the cut sides and toast on a skillet until golden brown. Place the grilled chicken on the bottom half, top with crispy bacon, provolone cheese, and tomato slices. Spread garlic aioli and guacamole on the top half of the ciabatta rolls. Close the sandwich.

    Cut the sandwich in half and serve with kettle chips on the side.
