French Toast Preparation

    Prepare the egg mixture

    In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until fully combined.

    Dip the bread

    Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Dip each slice of brioche bread into the egg mixture, ensuring both sides are well coated.

    Cook the French toast

    Place the coated slices in the skillet and cook for about 2-3 minutes on each side, or until golden brown. Add more butter as needed for subsequent batches.

    Once all slices are cooked, sprinkle with powdered sugar before serving.

Homefries Preparation

    Prepare the potatoes

    Wash and dice the potatoes into small cubes (about 1/2 inch).

    Cook the homefries

    In a large skillet, heat olive oil over medium-high heat. Add the diced potatoes, and season with salt and black pepper. Cook for about 10 minutes, stirring occasionally.

    Add onions and peppers

    Add the diced onion and bell pepper to the skillet. Continue to cook for another 5-7 minutes, or until the potatoes are tender and the vegetables are softened.

    Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.

    Cook the chicken

    In a skillet over medium heat, cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked through and juices run clear.

    Slice and serve

    Once cooked, remove from heat, let rest for a couple of minutes, then slice and serve alongside the French toast and homefries.
