Method

Kettle Chips Preparation

    Slice Potatoes

    Wash and peel the russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes into thin rounds, about 1/8-inch thick.

    Soak Potatoes

    Place the sliced potatoes in a bowl of cold water for at least 30 minutes. This will help remove excess starch, resulting in crispier chips.

    Heat Oil

    In a large, deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Fry Chips

    Remove the potato slices from the water and dry them thoroughly with paper towels. Carefully add a handful of potato slices to the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-5 minutes.

    Season Chips

    Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle Old Bay seasoning over the chips to taste.

    Cool and Serve

    Allow the chips to cool slightly before serving. Transfer them to a serving bowl.

Old Bay Aioli Preparation

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, minced garlic, Old Bay seasoning, and lemon juice.

    Mix Well

    Stir the mixture until all ingredients are well combined. Adjust the seasoning with salt to taste.

    Chill

    Cover the aioli and refrigerate for at least 30 minutes to let the flavors meld.

    Serve

    Serve the Old Bay aioli alongside the kettle chips for dipping.
