Home Fries Preparation

Prepare the Potatoes
Dice the potatoes into small cubes.

Cook the Home Fries
In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with garlic powder, onion powder, paprika, salt, and black pepper. Stir to combine.

Fry Until Golden
Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy. Remove from heat and set aside.

Prepare the Filling
In a separate bowl, combine the sliced roasted turkey, crumbled bacon, shredded provolone cheese, fresh spinach, and diced tomato.

Cook the Omelet
Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet and let it cook undisturbed until the edges begin to set, about 2-3 minutes.

Add the Filling
Once the edges are set, add the filling mixture to one half of the omelet. Use a spatula to gently fold the other half over the filling.

Cook for an additional 2-3 minutes, or until the cheese is melted and the omelet is cooked through. Slide the omelet onto a plate.

Top the omelet with a tablespoon of guacamole.
