Shape the mixture into patties, about 2-3 inches in diameter.

In a bowl, whisk together cornmeal, all-purpose flour, baking powder, sugar, and salt.

Add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.

Slice the green tomatoes into 1/2 inch thick slices.

In a large pan, heat vegetable oil over medium-high heat. Fry the breaded tomatoes for 3-4 minutes per side until golden brown.
Chipotle Hollandaise

Slowly drizzle in the melted butter while whisking continuously. Add the chipotle in adobo, lemon juice, and salt to taste.

Asparagus
