Pancake Preparation

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

    Combine Wet Ingredients

    In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; some lumps are okay.

    Preheat the Griddle

    Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

    Cook Pancakes

    Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.

    Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining pancakes.

    In a medium bowl, combine the softened unsalted butter, bourbon, powdered sugar, and cinnamon. Mix until smooth and well combined.

    Transfer the bourbon butter to a small dish or shape into a log and wrap in parchment paper. Chill in the refrigerator until firm.

Serving

    Stack the pancakes on a plate and top with a generous dollop of bourbon butter. Dust with powdered sugar to taste before serving.
