Brisket Preparation

Season the Brisket
Rub the brisket with salt and black pepper on all sides.

Sear the Brisket
In a large skillet, heat olive oil over medium-high heat. Sear the brisket for about 5 minutes on each side until browned.

Cook the Brisket
Transfer the brisket to a slow cooker. Add chopped onion, minced garlic, beef broth, Worcestershire sauce, thyme, and bay leaves. Cover and cook on low for 8 hours or until tender.

Prepare the Vegetables
About 30 minutes before the brisket is done, add diced carrots, frozen peas, and corn to the slow cooker. Stir to combine and continue cooking until the vegetables are tender.

Layer the Ingredients
Preheat the oven to 400°F (200°C). In a large baking dish, layer the brisket and vegetable mixture at the bottom, then top with the mashed potatoes, spreading evenly.

Sprinkle the shredded cheddar cheese on top of the mashed potatoes. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
