Method

Preparation of Homefries

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes.

    Cook the Homefries

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 15-20 minutes, stirring occasionally until the potatoes are golden brown and tender.

Cooking Chorizo and Eggs

    Cook the Chorizo

    In another skillet over medium heat, add the chorizo. Cook for about 5-7 minutes until fully cooked and browned.

    Scramble the Eggs

    In a bowl, whisk the eggs. Once the chorizo is cooked, push it to one side of the skillet and pour the eggs into the empty side. Stir gently until the eggs are scrambled and cooked through, about 3-5 minutes.

Sauteing Onions

    Sauté the Onions

    In a separate pan, add a little olive oil and sliced onions. Sauté over medium heat until onions are translucent and slightly caramelized, about 5-7 minutes.

Assembling Tacos

    Warm the Tortillas

    In a dry skillet, warm each flour tortilla for about 30 seconds on each side until soft.

    Fill the Tacos

    On each tortilla, layer the scrambled eggs and chorizo mixture, sautéed onions, and crumbled cotija cheese. Top with pico de gallo and cilantro.

    Serve with Poblano Sauce

    Drizzle poblano sauce over the tacos before serving.
