Meats

Method

Preparation

  1. 1

Preheat your oven to 350°F (175°C).

  2. 2

In a skillet over medium heat, cook the bacon until crispy. Remove from skillet and drain on paper towels. Crumble once cooled.

  3. 3

In the same skillet, add the breakfast sausage and cook until browned and cooked through. Drain excess grease.

Gravy Preparation

  1. 4

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until lightly golden.

  2. 5

Gradually whisk in the milk, stirring constantly until the mixture thickens.

  3. 6

Add the queso cheese, salt, and black pepper. Stir until the cheese is melted and the gravy is smooth.

Assembling the Nachos

  1. 7

    Layering the Nachos

On a large baking sheet or oven-safe platter, spread the tortilla chips evenly.

  2. 8

Evenly distribute the cooked sausage and crumbled bacon over the chips.

  3. 9

Pour the queso gravy generously over the chips and meat.

  4. 10

Sprinkle the crumbled Cotija cheese on top.

Final Touches

  1. 11

Place the nachos in the preheated oven and bake for 10-15 minutes until heated through and the cheese is bubbly.

  2. 12

Remove from the oven and top with pico de gallo, guacamole, chopped cilantro, sliced green onions, and sliced jalapeños to taste.

  3. 13

Serve immediately and enjoy your breakfast nachos!
