    Cook the Bacon and Chorizo

    In a skillet over medium heat, add the bacon slices and cook until crispy. Remove from the skillet and let drain on paper towels. In the same skillet, add the chorizo, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them together with salt, black pepper, garlic powder, and onion powder. Pour the egg mixture into the skillet with the chorizo and cook while stirring until the eggs are fully scrambled and cooked through, about 3-4 minutes.

    Combine the Filling

    Chop the crispy bacon into small pieces and add it to the scrambled eggs and chorizo mixture. Stir in the shredded cheddar cheese until melted and evenly distributed.

    Fill the Egg Rolls

    Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2-3 tablespoons of the filling mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll it up tightly to seal the egg roll. Repeat with the remaining wrappers and filling.

    Fry the Egg Rolls

    In a deep frying pan, heat the vegetable oil over medium-high heat until hot (about 350°F/175°C). Carefully add the egg rolls in batches, frying until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.
