Bacon and Eggs

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from skillet and place on paper towels to drain excess fat.

    Fry the Eggs

    In the same skillet, crack the eggs and cook them sunny-side up for about 3-4 minutes or until the whites are set. Season with salt and pepper.

Tomato and Garlic Aioli

    Prepare the Aioli

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Stir until well combined. Set aside.

Lettuce and Parmesan Crusted Brioche

    Prepare the Brioche

    Preheat the oven to 375°F (190°C). Spread butter on one side of each brioche slice and sprinkle Parmesan cheese on top. Place the slices on a baking sheet, cheese side up, and bake for 10-12 minutes until golden and crispy.

    Assemble the Lettuce

    Wash and dry the romaine lettuce leaves. Set aside for assembly.

Homefries

    Cook the Homefries

    Dice the potatoes into small cubes. In a large skillet, heat olive oil over medium heat. Add the diced potatoes, salt, paprika, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until crispy and golden brown.

Assembly

    Assemble the BLT&E

    On a slice of Parmesan-crusted brioche, spread a generous amount of garlic aioli. Layer with crispy bacon, fried egg, and romaine lettuce. Top with another slice of brioche. Serve with homefries on the side.
