    Preheat the oven

    Preheat your oven to 425°F (220°C).

    Mix dry ingredients

    In a large bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of baking soda, and 1 teaspoon of salt.

    Cut in butter

    Add 1 tablespoon of unsalted butter to the flour mixture and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.

    Add buttermilk

    Pour in 3 tablespoons of buttermilk and mix until just combined. Do not overmix.

    Shape biscuits

    Turn the dough onto a floured surface and pat it to about 1-inch thick. Cut out biscuits using a round cutter or glass.

    Bake biscuits

    Place the biscuits on a baking sheet and bake for 12-15 minutes until golden brown.

Country Sausage Gravy

    Cook sausage

    In a large skillet over medium heat, add 1 pound of ground breakfast sausage. Cook until browned, breaking it up with a spoon.

    Make roux

    Sprinkle 1/4 cup of all-purpose flour over the cooked sausage and stir to combine, cooking for 1-2 minutes.

    Add milk

    Gradually whisk in 2 cups of milk, stirring continuously until the gravy thickens, about 5-7 minutes.

    Season gravy

    Add 1 teaspoon of black pepper and salt to taste. Stir well to combine.

    Prepare potatoes

    Wash and dice 4 medium potatoes into small cubes.

    Cook potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced potatoes and cook for 10-15 minutes, stirring occasionally.

    Add vegetables

    Chop 1 medium onion and 1 medium bell pepper. Add them to the skillet with the potatoes and cook for another 5-7 minutes until the potatoes are crispy and tender.

    Season home fries

    Season with salt and black pepper to taste. Serve hot.
