Prep the Ingredients
Start by rinsing the guajillo and ancho peppers. Remove the stems and seeds, and place them in a bowl with hot water to soak for about 15 minutes.

Cook the Brisket
In a slow cooker, place the beef brisket. Add chopped yellow onion, minced garlic, cumin, oregano, bay leaves, and drained soaked peppers. Pour in the beef broth and season with salt and black pepper. Cook on low for 8 hours or until the brisket is tender.

Shred the Meat
Once cooked, remove the brisket from the slow cooker and shred it using two forks. Reserve the cooking liquid (consome) for dipping.

Cook the Quesadilla
Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas, cheese, and brisket.

Serve
Serve the quesadillas hot with tomatillo salsa on the side and a small bowl of the reserved consome for dipping.
