Pigs in a Blanket

    Prepare the Puff Pastry

    Preheat the oven to 400°F (200°C). Roll out the puff pastry sheet on a lightly floured surface and cut it into strips wide enough to wrap around the sausages.

    Wrap the Sausages

    Take each breakfast sausage and wrap it in a strip of puff pastry, ensuring it is completely covered. Place the wrapped sausages seam side down on a baking sheet lined with parchment paper.

    Apply Egg Wash

    Brush the tops of the wrapped sausages with the egg wash to give them a golden color when baked.

    Bake

    Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown and puffed up.

    Cook the Eggs

    In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook to your preference (sunny-side up, scrambled, etc.).

    Prepare the Potatoes

    Wash and dice the potatoes, onion, and bell pepper into small pieces.

    Cook the Homefries

    In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally.

    Add Vegetables

    Add the diced onion and bell pepper to the skillet. Season with salt and black pepper. Continue to cook for another 10-15 minutes until the potatoes are golden and tender.
