Cook the Meats
In a large skillet over medium heat, cook the Canadian bacon until heated through and slightly crispy, about 3-4 minutes. Remove and set aside. In the same skillet, cook the bacon until crispy, about 5-7 minutes. Remove and drain on a paper towel. Finally, cook the sausage in the skillet until browned and cooked through, about 5-6 minutes. Remove and set aside with the other meats.

Fry the Eggs
In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up or over easy), about 3-5 minutes. Season with salt and pepper to taste.
Pico de Gallo

Make the Pico de Gallo
In a bowl, combine diced tomatoes, finely chopped red onion, chopped cilantro, lime juice, and salt. Mix well and let sit for 10 minutes to allow flavors to meld.
Chipotle Butter

Prepare the Chipotle Butter
In a small bowl, mix together 1 stick of softened butter and 1 teaspoon of chipotle powder until well combined. Set aside.

Assemble the Big Brunch Bowl
In a large bowl, layer the creamy grits first, followed by the cooked meats (Canadian bacon, bacon, sausage). Top with fried eggs, a generous scoop of pico de gallo, and a dollop of chipotle butter. Serve warm.
