Berry Compote

Toppings

Method

Berry Compote

  1. 1

    Prepare the Berry Compote

In a medium saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Stir gently to combine and cook for about 5-7 minutes, or until the berries are soft and the mixture has thickened slightly.

  2. 2

    Cool the Compote

Remove from heat and let the compote cool slightly before using. It can be made ahead and stored in the refrigerator.

French Toast

  1. 3

    Prepare the Egg Mixture

In a large bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

  2. 4

    Dip the Bread

Preheat a non-stick skillet or griddle over medium heat. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.

  3. 5

    Cook the French Toast

Melt 1 tablespoon of butter in the skillet. Add the soaked bread slices and cook for about 3-4 minutes on each side, or until golden brown. Repeat with remaining bread, adding more butter as necessary.

Assembly

  1. 6

    Plate the French Toast

Place 2 slices of French toast on each plate. Spoon the warm berry compote generously over the top.

  2. 7

    Add Toppings

Sprinkle granola over the compote, drizzle with vanilla yogurt, and top with whipped cream as desired.
