Omelet Directions

Prepare the Ingredients
In a mixing bowl, whisk together the eggs until they are fully combined and season with a pinch of salt and black pepper.

Cook the Omelet
Heat a non-stick skillet over medium heat and add a small amount of oil or butter. Once hot, pour in the whisked eggs. Allow them to cook for about 1-2 minutes or until the edges start to set.

Add Fillings
Sprinkle the Canadian bacon, sausage, crumbled bacon, sliced jalapenos, and shredded provolone cheese evenly over one half of the omelet. Once the cheese starts to melt, gently fold the other half of the omelet over the fillings.

Finish Cooking
Cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through. Slide onto a plate and set aside.

Prepare the Hollandaise
In a heatproof bowl over a pot of simmering water (double boiler), whisk together the egg yolks and lemon juice until thick and pale.

Add Butter
Slowly whisk in the melted butter until the sauce is thickened and emulsified. Add minced chipotle pepper, salt, and black pepper. Whisk until combined.

Cook the Potatoes
In a large skillet, heat the olive oil over medium-high heat. Add the diced potatoes, onions, and bell peppers. Season with salt and black pepper.

Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender. Adjust seasoning to taste.
