Method

Preparation of Wings

    Clean the Wings

    Rinse the chicken wings under cold water and pat them dry with paper towels.

    Marinate the Wings

    In a large bowl, combine olive oil, salt, black pepper, garlic powder, and smoked paprika. Add the chicken wings and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours.

Cooking the Wings

    Preheat Smoker

    Preheat your smoker to 225°F (107°C).

    Smoke the Wings

    Place the marinated chicken wings in the smoker, ensuring they are not touching. Smoke for approximately 1.5 to 2 hours until the internal temperature reaches 165°F (74°C) and they are crispy.

Making BBQ Sauce

    Combine Ingredients

    In a saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper.

    Cook the Sauce

    Bring the mixture to a simmer and cook for about 15-20 minutes, stirring occasionally until it thickens.

Making Buffalo Sauce

    Melt Butter

    In a small saucepan, melt the butter over low heat.

    Mix Ingredients

    Add the hot sauce and garlic powder to the melted butter and whisk until well combined. Heat through and set aside.

Making Honey Sriracha Sauce

    Combine Sriracha and Honey

    In a small bowl, mix together Sriracha sauce and honey until smooth. Adjust the sweetness by adding more honey if desired.

Serving

    Toss or Serve on the Side

    Once the wings are cooked, you can either toss them in your choice of BBQ sauce, Buffalo sauce, or Honey Sriracha sauce, or serve the sauces on the side for dipping.

    Plate the Wings

    Serve the smoked wings on a platter and enjoy!
