Main Ingredients

Method

Preparation

  1. 1

    Prepare the Beef

Remove the beef tenderloin from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your oven to 400°F (200°C).

  2. 2

    Season the Meat

Rub the beef tenderloin with olive oil, then generously season it with salt and black pepper on all sides.

  3. 3

    Prepare Garlic and Herbs

Mince the garlic cloves and chop the fresh rosemary finely.

Cooking

  1. 4

    Sear the Beef

In a large oven-safe skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the beef tenderloin and sear for about 2-3 minutes on each side until a golden crust forms.

  2. 5

    Add Garlic and Herbs

Add the minced garlic and chopped rosemary to the skillet, then place the skillet in the preheated oven.

  3. 6

    Roast the Beef

Roast in the oven for about 15-20 minutes for medium-rare, or until it reaches your desired level of doneness (internal temperature of 130°F/54°C for medium-rare).

  4. 7

    Rest the Meat

Remove the skillet from the oven and add the butter. Baste the beef with the melted butter, then let it rest for 10 minutes before slicing.

Serving

  1. 8

    Plate the Dish

Slice the beef tenderloin into medallions and arrange them on a plate. Drizzle with balsamic reduction.

  2. 9

    Add Garnish

Top with fresh arugula and sprinkle with grated Parmesan cheese before serving.
