Filling Preparation

Prepare the Peaches
Start by washing and slicing the peaches into thin wedges. Place them in a large bowl.

Add Flavor
Mix in the brown sugar, lemon juice, cinnamon, and a pinch of salt with the sliced peaches. Toss until the peaches are well-coated. Set aside to marinate for about 15 minutes.

Combine Dry Ingredients
In another bowl, combine the rolled oats, flour, brown sugar, and baking powder. Mix well.

Make the Caramel Sauce
In a saucepan, melt the granulated sugar over medium heat, stirring constantly until it turns a golden brown color.

Add Butter and Cream
Remove from heat and quickly whisk in the butter and heavy cream. Be careful, as it will bubble up. Stir in the vanilla extract and set aside.
Assembly and Baking

Preheat the Oven
Preheat your oven to 350°F (175°C).

Layer the Peaches
Spread the marinated peaches evenly in the bottom of a greased 9x13 inch baking dish.
