Preparing the Potatoes

Preheat the Oven
Preheat your oven to 400°F (200°C).

Cool the Potatoes
Once baked, remove the potatoes from the oven and let them cool for about 10 minutes.

Chop the Vegetables
Finely chop the red onions and slice the green onions, separating the green tops from the white parts.
Assembling the Potato Skins

Slice and Scoop
Once the potatoes are cool enough to handle, slice them in half lengthwise and scoop out a small portion of the flesh, leaving a small border.

Add Toppings
Place the potato halves on a baking sheet. Sprinkle the insides with shredded cheddar cheese, chopped bacon, red onions, and the white parts of the green onions.

Bake Again
Return the loaded potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven, top with sour cream, BBQ sauce, and the green tops of the green onions before serving. Enjoy!
