Chili Preparation

    Sauté the Base

    In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

    Add Garlic and Spices

    Stir in the minced garlic, chili powder, cumin, salt, and black pepper. Cook for another 1-2 minutes until fragrant.

    Combine Meats and Beans

    Add the chopped prime brisket and burnt ends to the pot. Stir in the kidney beans and diced tomatoes.

    Add Beer

    Pour in the IRB beer and stir to combine all ingredients. Bring the mixture to a simmer.

    Simmer the Chili

    Reduce the heat to low and let the chili simmer for about 30-45 minutes, stirring occasionally. This will allow the flavors to meld and the chili to thicken.

Serving

    Prepare Toppings

    While the chili is simmering, prepare the toppings by slicing the green onions and setting out shredded cheddar cheese, sour cream, and crackers.

    Serve Chili

    Once the chili is ready, ladle it into bowls and top with shredded cheddar cheese, a dollop of sour cream, and sliced green onions. Serve with crackers on the side.
