Shred the Cabbage
Begin by removing the outer leaves of the green cabbage and red cabbage. Cut them in half and remove the core. Use a sharp knife or a mandoline to shred the cabbage into thin strips. You will need about 4 cups of shredded green cabbage and 1 cup of shredded red cabbage.

Peel the carrots and then grate them using a box grater or a food processor. You will need about 2 cups of grated carrots.
