Brisket Filling

Prepare Brisket Filling

    Cook the Onion and Garlic

    In a skillet over medium heat, add a splash of oil. Once hot, add the diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.

    Combine Ingredients

    Add the braised brisket, cumin, chili powder, salt, black pepper, and chopped cilantro to the skillet. Stir well to combine all ingredients and heat through for about 5 minutes. Remove from heat and let cool slightly.

Assemble Chimichangas

    Prepare Tortillas

    Lay out the flour tortillas on a clean surface. Divide the brisket filling evenly among the tortillas, placing it in the center of each.

    Add Cheese

    Sprinkle a quarter cup of shredded cheese over each portion of brisket filling.

    Fold and Secure

    Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to secure the filling inside. Repeat with all tortillas.

Fry Chimichangas

    Heat Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Chimichangas

    Carefully lower each chimichanga into the hot oil, frying in batches to avoid crowding. Fry for about 3-4 minutes per side, or until golden brown and crispy. Use tongs to flip them halfway through.

    Drain and Serve

    Once cooked, remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with sour cream and salsa.
