Preparing the Ribs

    Season the Ribs

    In a small bowl, combine salt, black pepper, paprika, garlic powder, onion powder, and brown sugar. Mix well to create a dry rub.

    Apply the Rub

    Rub the seasoning mixture generously over both sides of the pork ribs. Make sure to cover all areas for maximum flavor.

    Refrigerate

    Wrap the seasoned ribs in plastic wrap or aluminum foil and refrigerate for at least 2 hours, preferably overnight.

Cooking the Ribs

    Preheat the Smoker

    Prepare your smoker by preheating it to 225°F (107°C). Use wood chips of your choice for smoking (e.g., hickory, apple, or cherry).

    Smoke the Ribs

    Place the ribs in the smoker bone side down. Smoke for about 5-6 hours, maintaining a consistent temperature and adding wood chips as needed.

    Add BBQ Sauce

    In the last 30 minutes of cooking, brush the BBQ sauce onto the ribs, allowing it to caramelize slightly.

    Check for Doneness

    The ribs are done when they have a nice bark and the meat pulls away from the bone easily. An internal temperature of 190°F (88°C) is ideal.

Serving the Ribs

    Rest the Ribs

    Remove the ribs from the smoker and let them rest for about 10-15 minutes before slicing.

    Slice and Serve

    Slice the ribs between the bones and serve with your choice of two sides, such as coleslaw and cornbread, or baked beans and potato salad.
