    Prepare the sweet potatoes

    Peel and dice the sweet potatoes into small cubes, about 1/2 inch each.

    Chop vegetables

    Dice the red bell pepper and onion into small pieces. Chop the cilantro and set aside.

    Rinse black beans

    Drain and rinse the black beans under cold water, then set aside.

Cooking

    Cook the sweet potato

    In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes, season with salt, black pepper, and paprika. Cook for about 10-12 minutes, stirring occasionally, until tender and slightly crispy.

    Add bell pepper and onion

    Add the diced red bell pepper and onion to the skillet. Cook for an additional 5-7 minutes, until the onions are translucent and the peppers are tender.

    Incorporate black beans

    Add the rinsed black beans and pickled peppers to the skillet. Stir well and cook for another 3-4 minutes to heat through.

    Fry the eggs

    In a separate pan, fry the eggs to your desired doneness (sunny side up or over easy).

    Serve the hash

    Spoon the sweet potato hash mixture onto plates. Top each serving with a fried egg, sprinkle with chopped cilantro, and add queso on top.
