Prepare the Chicken

Cut the chicken thighs into bite-sized pieces and season with salt and black pepper.

Set Up Breading Station

In three separate bowls, place the all-purpose flour in the first bowl, whisk the eggs in the second bowl, and combine the macha powder with panko breadcrumbs in the third bowl.

Bread the Chicken

Take each piece of chicken, dredge it in the flour, dip it in the egg, and finally coat it in the macha-panko mixture. Ensure that each piece is well coated.

Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until hot (approximately 350°F or 175°C).

Fry the Chicken

Carefully place the breaded chicken pieces into the hot oil in batches. Fry until golden brown and cooked through, about 4-5 minutes on each side. Use a slotted spoon to remove them and drain on paper towels.
