Pancake Batter

Method

Preparing the Pancake Batter

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and sugar until well combined.

  2. 2

    Combine Wet Ingredients

In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter until fully blended.

  3. 3

    Combine Wet and Dry Mixtures

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Cooking the Pancakes

  1. 4

    Preheat the Pan

Heat a non-stick skillet or griddle over medium heat. If desired, lightly grease the surface with a little butter or cooking spray.

  2. 5

    Cook the Pancakes

Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes, or until golden brown.

  3. 6

    Repeat

Continue cooking the remaining batter, adjusting the heat as necessary. Stack the pancakes on a plate as they finish cooking.

Serving

  1. 7

    Plate the Pancakes

Serve the fluffy pancakes warm, topped with a generous handful of seasonal berries and a drizzle of maple syrup to taste.
