Chicken Preparation

    In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

    In another bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined.

Cooking the Chicken

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Chicken

    Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

    Fry the Chicken

    Carefully place the breaded chicken thighs in the hot oil. Fry for about 6-8 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

    In a small bowl, whisk together the mayo, hot sauce, honey, and lemon juice until smooth and well combined.
