Eggs, potatoes, queso, & salsa, on 3 flour tortillas with your choice of: Smoked beef barbacoa, oyster mushroom (vegetarian). Pick a salsa: Taquera verde, taquera roja, salsa macha.

Preparing the Filling

    Cook the Potatoes

    In a medium pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-12 minutes until tender. Drain and set aside.

    Scramble the Eggs

    In a large skillet over medium heat, crack the eggs into a bowl and whisk. Add the cooked potatoes to the skillet and pour the eggs over them. Stir occasionally until the eggs are fully cooked, about 5 minutes.

    Prepare the Mushroom Option (if using)

    In a separate skillet, add a bit of oil over medium heat. Add the sliced oyster mushrooms and sauté until they are golden brown and tender, about 5-7 minutes.

Assembling the Tacos

    Warm the Tortillas

    In a dry skillet or directly over the stove flame, warm the flour tortillas for about 30 seconds on each side until soft and pliable.

    Fill the Tacos

    On each tortilla, add a generous amount of the scrambled eggs and potato mixture. If desired, add the smoked beef barbacoa or the sautéed oyster mushrooms.

    Top with Queso and Salsa

    Sprinkle crumbled queso fresco on top of the filling and drizzle your choice of salsa (taquera verde, taquera roja, or salsa macha) over the tacos.
