    Prepare the Marinade

    In a mixing bowl, combine the coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, lime juice, curry powder, salt, and black pepper. Whisk until well blended.

    Marinate the Chicken

    Cut the chicken breast into bite-sized pieces and place them in the marinade. Cover and refrigerate for at least 1 hour, or ideally overnight to allow the flavors to penetrate the meat.

    Soak the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Skewer the Chicken

    Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.

    Preheat the Grill

    Preheat your grill or barbecue to medium-high heat.

    Cook the Chicken Satay

    Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 75°C (165°F).

    Serve

    Remove the skewers from the grill and let them rest for a few minutes. Serve warm with peanut sauce or sweet chili sauce on the side.
