    Prepare the Potatoes

    Peel and chop the potatoes into even-sized chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Cook the Pork Chop

    Heat olive oil in a skillet over medium-high heat. Season the pork chop with salt and pepper. Sear the pork chop for about 5-7 minutes on each side until cooked through and nicely browned. Remove from skillet and let rest.

    Make the Onion and Bourbon Mustard Glaze

    In the same skillet, add chopped onion and sauté until caramelized. Stir in bourbon mustard and cook for an additional 2-3 minutes. Pour the glaze over the pork chop.

    Prepare the Mashers

    Drain the cooked potatoes and return to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy. Stir in crumbled goat cheese until melted and well combined.

    Serve

    Plate the pork chop with the onion glaze on top and serve alongside the creamy goat cheese mashers.
