Duck Enchiladas

    Prepare the Filling

    In a mixing bowl, combine the duck confit and black beans. Mix well and set aside.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Warm the corn tortillas in a dry skillet or microwave until pliable. Take a tortilla, place a portion of the duck and black bean mixture in the center, and roll it up tightly. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Spread half of the enchilada sauce in the bottom of a baking dish. Place the rolled enchiladas seam-side down in the dish. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.

    Bake

    Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let cool slightly. Drizzle with chili emulsion and garnish with chopped cilantro. Serve with sour cream on the side if desired.
