Prepare cocktail
Add white rum, guava purée, fresh lime juice, and ginger syrup into a cocktail shaker.
Fill the shaker with ice and shake vigorously for 10–12 seconds until well chilled and slightly diluted.
Fill a highball or Collins glass with fresh ice.
Strain the shaken mix over the ice into the prepared glass using a fine strainer to remove any pulp or ice shards.
Top gently with 3 oz ginger beer, pouring slowly to preserve carbonation. Stir once gently with a bar spoon to integrate.
Add 2 dashes of Angostura bitters on top; allow them to swirl lightly into the foam for aroma and depth.
Garnish & Serve
Slide a lime wheel onto the rim of the glass.
Skewer the candied ginger on a pick and rest across the rim or drop into the drink.
Clap the mint between your palms once to release oils and tuck the sprig into the drink for aroma.
Serve immediately with a straw and an optional second lime wedge on the side.
