    In a wide shallow bowl or 9x13" pan, whisk 4 large eggs until homogenous. Add 1 cup whole milk, 1 tablespoon granulated sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and 1 teaspoon salt. Whisk until well combined. This is the dipping custard.

    Soak bread

    Preheat a large skillet or griddle over medium heat. Melt 1 tablespoon butter in the pan so it coats the surface. Working one slice at a time, submerge a Thick 'N Fluffy bread slice in the custard, letting it soak about 15–20 seconds per side (longer if bread is very thick), until saturated but not falling apart. Let excess custard drip back into the bowl.

    Cook

    Add remaining 1 tablespoon butter to the skillet. Place soaked slices in the skillet in a single layer (cook in two batches if needed). Cook 3–4 minutes per side over medium heat until deep golden brown and cooked through (internal custard set). Adjust heat as needed to avoid burning while allowing the center to cook.

    If cooking in batches, keep finished slices on a baking sheet in a single layer in a 200°F (95°C) oven to stay warm while you finish other components. Serve with warm maple syrup.

Scrambled Eggs (4 servings)

    Beat eggs

    Crack 8 large eggs into a bowl. Add 1 cup milk or half-and-half, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk thoroughly until uniform and slightly frothy.

    Heat a large nonstick skillet over medium-low heat and melt 2 tablespoons butter, swirling to coat. Pour the egg mixture into the pan. Allow eggs to set slightly at the edges for about 15–20 seconds, then using a heatproof spatula, gently push curds from the edge toward the center. Continue slowly folding and stirring every few seconds until soft, creamy curds form and eggs are just set but still moist, about 4–6 minutes total. Remove from heat just before they look fully dry—the residual heat will finish them.

    Taste and adjust seasoning. Sprinkle chopped chives on top if using. Keep warm in the oven at 200°F (95°C) if needed.

Golden Hash Browns (4 servings)

    Grate and dry potatoes

    Coarsely grate 2 peeled russet potatoes and the small grated onion into a bowl. Transfer grated potatoes and onion to a clean dish towel or several layers of paper towels and squeeze out as much moisture as possible (this step is critical for crispy hash browns). Measure the drained grated potato; you should have roughly 3–4 cups packed.

    Return dried potatoes to a bowl. Add 2 tablespoons flour, 1 beaten egg, 1 teaspoon salt, and 1/2 teaspoon black pepper. Toss to combine so the flour and egg coat the shreds.

    Transfer cooked hash browns to a paper-towel-lined plate to drain excess oil. Season with extra salt to taste and keep warm in a 200°F (95°C) oven until serving.

    Preheat an oven to 400°F (200°C) for hands-off bacon. Line a rimmed baking sheet with foil and place an oven-safe cooling rack on top (optional) for crispier bacon. Lay 8 hickory-smoked bacon strips in a single layer and bake 12–18 minutes depending on thickness and desired crispiness. For stovetop, cook over medium heat in a skillet 4–6 minutes per side until crisp. Transfer to paper towels to drain.

Cook, turning occasionally, until evenly browned and cooked through, about 12–15 minutes, or until internal temperature reaches 160°F (71°C).
