Blue Raspberry Lemonade
Method
Blue Raspberry Lemonade
- 1
Make Simple Lemon Syrup
In a small saucepan combine 0.5 cups granulated sugar with 0.5 cups water (use part of the 3 cups reserved for lemonade). Bring to a gentle simmer over medium heat, stirring until sugar fully dissolves, about 2–3 minutes. Remove from heat and let cool to room temperature.
- 2
Prepare Fresh Lemon Juice
Juice enough lemons to yield 1 cup fresh lemon juice. Strain through a fine mesh sieve into a measuring cup to remove seeds and pulp for a smooth lemonade base.
- 3
Combine Lemonade Base
In a large pitcher, combine the 1 cup fresh lemon juice, the cooled simple syrup, and the remaining 2.5 cups of cold water (to total 3 cups water used for lemonade). Stir well to combine and taste; adjust sweetness by adding up to 2 tablespoons more sugar dissolved in a little water if you prefer sweeter.
- 4
Chill
Refrigerate the lemonade base for at least 15 minutes if time allows. Chilling helps the flavors marry and keeps the finished drink cold when served.
- 5
- 6
Assemble the Splasher
Fill each prepared glass about halfway with ice cubes (approximately 4 cups distributed among 4 servings). Pour the chilled lemonade base into the glasses, filling each about two-thirds full and leaving room for sparkling water and syrup.
- 7
Add Blue Raspberry Flavor
Divide the blue raspberry syrup (0.5 cups) evenly among the glasses by pouring slowly down the side or over the back of a spoon so it creates a vivid blue layer/swirls in the lemonade. For a gradient effect pour about 1.5 tablespoons (approx. 22 ml) per glass; adjust for 4 glasses.
- 8
Top with Sparkling Water
Top each glass with cold sparkling water or club soda (2 cups divided across 4 servings ≈ 1/2 cup each). Stir gently once or twice to create a pretty swirl without fully blending away the layered look, or leave layers intact for visual effect.
- 9
Garnish and Finish
Float a few fresh blueberries (about 2–3 per glass) and add a lemon slice to the rim. Tuck a mint sprig into each glass if using. Serve immediately with a straw so guests can stir to mix flavors as desired.
- 10
Notes and Variations
To make a boozy version, add 1.5 oz vodka or light rum per serving before topping with sparkling water. For a more tart drink, reduce simple syrup. If you don't have blue raspberry syrup, substitute blue curaçao liqueur for an alcoholic option or use a concentrated blue sports drink for color and sweetness (reduce simple syrup accordingly).
