Prepare cheese
If your cheddar is in a block, grate it finely until you have about 1 cup packed shredded cheese. Finely shredded cheese melts more evenly and quickly, contributing to a smooth, creamy texture and reliable calorie addition.

Warm milk and butter
Place a small saucepan over low heat or use a microwave-safe bowl. Add 1 tablespoon unsalted butter and 2 tablespoons whole milk. Warm gently until the butter is melted and the mixture is just warm (do not boil). This step helps the cheese incorporate smoothly into eggs and increases the richness (and calories).

Make cheesy mixture
Remove the warmed milk/butter from heat. Add the 1 cup shredded sharp cheddar to the warm mixture and stir until the cheese is mostly melted and you have a thick, glossy sauce. If the cheese clumps, return to very low heat and stir continuously until smooth. Season the cheese sauce with 1/4 teaspoon kosher salt and 1/8 teaspoon freshly ground black pepper. If using, fold in 1/4 cup crumbled cooked bacon now.

Fold into cooked eggs (or serve on top)
For scrambled eggs: prepare your eggs in the pan as usual. When eggs are about 80% set but still slightly moist, remove pan from direct heat and immediately spoon the cheddar mixture over the eggs. Gently fold through until combined and fully melted, then serve. For fried or poached eggs: spoon the cheddar mixture over the cooked eggs just before serving so it warms and melts over the eggs. For omelets: add the cheddar mixture in the final 30 seconds of cooking before folding.

Finish and serve
Taste and adjust seasoning with a tiny additional pinch of salt or pepper if desired. Serve immediately so the cheese remains warm and melty. This add-on yields approximately an extra 910 calories when using the full quantities listed (1 cup sharp cheddar, 1 tablespoon butter, 2 tablespoons whole milk, plus optional bacon).
